Fall how I love thee. Your scents and crisp cool air are so wonderful! I’m a little dramatic when it comes to fall. It’s my favorite season!

Fall brings me into the kitchen more often for baking and recipe creating. I think once the temperatures drop below 100 degrees outside I don’t feel so bad turning on my oven to bake.

Today’s recipe is perfect for the arrival of fall and it doesn’t even involve using the oven! Which is a good thing being it’s currently 103 degrees outside-eek. I live in the desert ya’ll. I won’t see cooler weather until October. But I can’t wait that long for all things pumpkin spice.

My kids love any kind of oatmeal bites and this pumpkin variation is a perfect quick and healthy fall snack. I hadn’t even rolled them into bites and the kids wanted to eat them!

Tips for making Pumpkin Spice Energy Bites:

  • You can use old fashioned oats or quick-cooking oats.
  • Freezer friendly! These energy bites can be stored in an airtight container in the fridge or freezer.
  • Make the rolling process easier by chilling the mixture in the fridge for 30 minutes before rolling into bites.
  • Roll bites with damp hands. This helps the mixture to stick to the bite and not on you!
  • This scoop is perfect for making your pumpkin spice energy bites.

Ingredients:

  • 1/2 cup nut butter (peanut or almond)
  • 1/3 cup honey
  • 2 tsp vanilla extract
  • 1 tsp pumpkin spice
  • 1 tsp nutmeg
  • 1 cup oats (old fashioned or quick)
  • 1 cup unsweetened coconut flakes
  • 1/2 unsalted pumpkin seeds
  • 1/2 cup mini chocolate chips (dark or semi-sweet)

Directions:

Mix nut butter, honey, vanilla and spices in large mixing bowl.

Next add oats, coconut flakes, pumpkin seeds and mini chocolate chips. Mix well. Refrigerate mixture for 30 minutes.

Remove from fridge and form into bites. This job is made easier with this scoop! If bites are sticking to your hands, get hands damp with water and roll.

Place bites in an airtight container and store in refrigerator or freezer.

Pumpkin Spice Energy Bites

Healthy, yummy no-bake pumpkin spice energy bites are packed with goodness. They are the perfect go-to snack for fall.

Prep Time 10 minutes
Fridge 30 minutes

Ingredients

  • 1/2 cup nut butter (peanut or almond)
  • 1/3 cup honey
  • 2 tsp vanilla extract
  • 1 tsp pumpkin spice
  • 1 tsp nutmeg
  • 1 cup oats (old fashioned or quick)
  • 1 cup unsweetened shredded coconut
  • 1/2 cup unsalted pumpkin seeds
  • 1/2 cup mini chocolate chips (dark or semi-sweet)

Instructions

  1. Mix nut butter, honey, vanilla and spices in large mixing bowl.

  2. Next add oats, coconut, pumpkin seeds and mini chocolate chips.

  3. Mix well.

  4. Refrigerate for 30 minutes. 

  5. Remove from fridge and roll into bites (about 2 Tbsp). This job is made easier with this scoop!

    If bites are sticking to your hands, get hands damp with water and roll. 

  6. Place in an airtight container and store in fridge until ready to eat.

It started with post it notes and then I wanted to make it cute and easier to execute. So I came up with 14 fun prompts to help me express my love for each kiddo.

Every night leading up to Valentine’s Day I tape a heart to their bedroom door. But you could put them in a lunchbox, car or bathroom mirror!

🍎This weekend we went to one of my favorite pla 🍎This weekend we went to one of my favorite places to conclude my birthday celebrations. @apple_annies is such a fun family activity and everyone always finds their perfect pumpkin.

Honestly, we debated going this year as the cost of gas is higher right now. It's a 2 hour drive for us. But my hubby knows how much I enjoy going. It's my little taste of fall in the desert. 
.
So we made it happen by cutting out a few things like:
▪️packing our own lunches & snacks
▪️walking instead of taking the tractor ride
▪️only buying one pumpkin each
▪️taking a family picture in the apple orchard, but not picking apples
.
Even though we didn't do "all the things" at the orchard this time we made the best memories. It's about having fun with those we love and care about, no matter how small or simple.

Here in AZ they start school in July! Still can’t get used to the modified year round schedule here.

Thankful for homeschooling my kiddos so we can start later than public school. I like to start our school year mid August and we skip a fall break.
