Fall how I love thee. Your scents and crisp cool air are so wonderful! I’m a little dramatic when it comes to fall. It’s my favorite season!
Fall brings me into the kitchen more often for baking and recipe creating. I think once the temperatures drop below 100 degrees outside I don’t feel so bad turning on my oven to bake.
Today’s recipe is perfect for the arrival of fall and it doesn’t even involve using the oven! Which is a good thing being it’s currently 103 degrees outside-eek. I live in the desert ya’ll. I won’t see cooler weather until October. But I can’t wait that long for all things pumpkin spice.
My kids love any kind of oatmeal bites and this pumpkin variation is a perfect quick and healthy fall snack. I hadn’t even rolled them into bites and the kids wanted to eat them!

Tips for making Pumpkin Spice Energy Bites:
- You can use old fashioned oats or quick-cooking oats.
- Freezer friendly! These energy bites can be stored in an airtight container in the fridge or freezer.
- Make the rolling process easier by chilling the mixture in the fridge for 30 minutes before rolling into bites.
- Roll bites with damp hands. This helps the mixture to stick to the bite and not on you!

Ingredients:
- 1/2 cup nut butter (peanut or almond)
- 1/3 cup honey
- 2 tsp vanilla extract
- 1 tsp pumpkin spice
- 1 tsp nutmeg
- 1 cup oats (old fashioned or quick)
- 1 cup unsweetened coconut flakes
- 1/2 unsalted pumpkin seeds
- 1/2 cup mini chocolate chips (dark or semi-sweet)
Directions:
Mix nut butter, honey, vanilla and spices in large mixing bowl.
Next add oats, coconut flakes, pumpkin seeds and mini chocolate chips. Mix well. Refrigerate mixture for 30 minutes.
Remove from fridge and form into bites. This job is made easier with this scoop! If bites are sticking to your hands, get hands damp with water and roll.
Place bites in an airtight container and store in refrigerator or freezer.

- 1/2 cup unsalted pumpkin seeds
- 1/2 cup mini chocolate chips (dark or semi-sweet)
Instructions

Next add oats, coconut, pumpkin seeds and mini chocolate chips.

Refrigerate for 30 minutes.
