Gluten Free Apple Crisp can satisfy your cravings for homemade baked goods with half the effort of making an apple pie.
Preheat oven to 350 degrees and grease a 9x13 inch baking dish with coconut oil.
In a mixing bowl add peeled and sliced apples, 2 Tbsp maple syrup, ¾ tsp of cinnamon, ¼ tsp of nutmeg, and lemon juice.
Stir until apple slices are evenly coated. Transfer to a 9x13 baking dish.
In the same mixing bowl, add topping ingredients. 2 cups light brown sugar, oats, almond flour, 1 tsp cinnamon, ½ tsp nutmeg, pinch of salt and diced butter cubes.
Use a pastry cutter to cut the butter into the oat mixture until mixture resembles pea sized crumbs.
Spread topping over apple slices. Gently pat to even out topping.
Bake 40-50 minutes, until golden brown and bubbling. Serve warm.
Optional: Serve with a scoop of vanilla ice cream on the side of your apple crisp.
Store any cooled leftover apple crisp covered in the refrigerator for up to a week.
